30 to 40 minutes
2 packages dry yeast
2 cups warm water
2 tablespoon sugar
1 tablespoon salt
6 3/4 cups unbleached flour
Oil two baking sheets.
Dissolve yeast in water in a large bowl, add sugar and salt. Add flour 1 cup at a time; stir until thoroughly combined. Knead 10 minutes.
Cover, let rise for one to two hours in a warm place in a buttered bowl.
Punch down dough and knead again. Divide in half, shape into two round loaves.
Preheat oven to 375 degrees F.
Place on prepared pans and let rise again for one to two hours. Cut three 1/4 inch deep slashes on top of each loaf.
Bake 30 to 40 minutes. Loaves should sound hollow when tapped.
