1 pound lean ground beef
1 cup large onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup original Bisquick
1 cup milk
1 medium tomato, sliced
3/4 cup shredded cheddar cheese or process American cheese (3 ounces)
Heat oven to 400 degrees. Spray pie plate, 9 x1 1/4 inches, with cooking spray. Cook beef and onion in 10-inch skillet over medium heat, stirring with heatproof spatula or spoon to break beef into small pieces. Cook until beef is brown; drain beef and onion in colander. Spread in pie plate; sprinkle with salt and pepper.
Stir Bisquick, milk and eggs in medium bowl, using fork, until blended. Pour into plate.
Bake 25 minutes. Top with tomato slices. Sprinkle with cheese. Bake 5 to 8 minutes longer or until knife inserted in center comes out clean
