1 1/2 cups Bisquick Complete Mix
1/2 cup milk
3 cans Hill Country Fare Chicken Broth
4 H-E-B Fully Cooked Boneless Seasoned Chicken Breasts, cut into large chunks
1 (16 ounce) bag Hill Country Fare Peas & Carrots
Combine Bisquick Complete Mix and milk in a mixing bowl. Place dough on a floured surface and knead for 1 minute until soft dough is formed. Roll dough out to 1/2-inch thickness using a rolling pin. Cut the dough into 1-inch biscuits and set aside.
Pour the chicken broth in a large soup pot and bring to a boil over High heat. Add the small biscuit dumplings to the boiling broth. Cover the pot with a tight-fitting lid and turn off the heat. Allow the dumplings to set for 25 minutes (do not remove the cover during set time).
Meanwhile, combine the chicken pieces and vegetables ina microwave-safe bowl. Cover the bowl with plastic wrap and heat on High power for 6 minutes.
Once the dumplings have completed cooking, add the heated chicken and vegetables and gently stir once to combine the chicken and dumplings. Season to taste with salt and pepper and server immediately.
