butter and flour

milk

minced onion

oz.
frozen chopped spinach

sour cream or cream cheese
1/4
c.
shredded Parmesan or Romano cheese
1 or 2
tsp.
salt, to taste
![]() Instructions ![]() Melt 3 tablespoons butter in a small skillet over medium heat. Add flour, stirring, until blended; simmer 2 or 3 minutes. Stir milk in gradually and cook until thickened and smooth; use a wire whisk to blend completely. Remove pan from heat.
![]() Place remaining tablespoon of butter in a 2-quart saucepan. Melt over medium heat, add onions and cook 3 or 4 minutes or until tender. Stir in spinach; add
2 tablespoons water, cover pot and reduce heat to medium-low. Stir occasionally and cook until spinach is tender.
![]() Stir in white sauce, sour cream (or cream cheese) and Parmesan or Romano cheese. Season with salt, to taste. Stir well to blend and simmer a few more minutes. Serve while hot.
