5 - 6 dozen cookies
3 cups H-E-B the baker's® scoop all purpose flour'
1 teaspoon Hill Country Fare baking powder
3/4 cup Pompeian extra light olive oil
2 cups H-E-B brown sugar packed
1 cup Each: hill country fare semisweet chocolate chips and H-E-B cranberries
1 cup Hill Country Fare shredded coconut (optional)
Heat oven to 350F. Spray 3 cookie baking sheets with no-stick spray and set aside.
Sift together the flour and baking powder and set aside.
Whip olive oil and brown sugar using an electric mixer on high speed for 3 minutes. Beat in the eggs, one at a time, on medium speed (about 1 minute). Add the sifted flour one cup at a time on low speed (about 2 minutes). Stir in chocolate chips, cranberries and shredded coconut, if desired, with a spoon.
Drop dough by rounded Tablespoonful onto prepared cookie sheets. Bake the cookies for 15 minutes or until golden brown.ADD-ON: 1 cup HILL COUNTRY FARE PECAN PIECES added with coconut and cranberries
