Holiday Brown and Wild Rice Pilaf

1  carton (32 oz.)  chicken broth

1  c.  uncooked wild rice

1  c.  uncooked brown rice

2  Tbsp.  H-E-B Reserve Extra Virgin Olive Oil

1  c.  celery, finely chopped

1/4  c.  shallots, finely chopped

1  c.  walnuts, chopped

1  c.  dried apricots, coarsely chopped

1/4  c.  golden raisins

1/4  c.  dried cranberries

•  salt & pepper


Pour broth and 1 cup water into a 2 or 3 quart saucepan; add wild and brown rice. Bring to a boil over medium-high heat. Cover pot; reduce heat to Low and simmer about 50 minutes or until rice is done.

In the meantime, heat olive oil in a large skillet over medium-high heat about 3 minutes. Add celery and shallots; cook 2 or 3 minutes. Stir in walnuts, apricots, raisins and cranberries. Stir and cook 3 or 4 minutes.

Fluff rice with a fork when done, toss rice with fruit-nut mixture. Season to taste with salt and pepper. Serve while hot.
