2  pieces  frozen H-E-B Fully Cooked® Lemon Herb Chicken Breasts

1/4  cup  Alessi Pine Nuts

1  pint  grape tomatoes

1/2  cup  chopped red onion

1/3  cup  chopped Gaea Pitted Kalamata Olives

1 1/2  cupa  uncooked DaVinci Orzo Pasta

1  (5 ounce) bag  Earthbound Farm Organic Baby Spinach

4  ounces  feta cheese crumbles, Mediterranean style


Place 2 quarts water in a 3-quart pot and bring to a boil over High heat.

Meanwhile, heat chicken in microwave according to package directions.

Toast pine nuts 6 to 8 minutes in a small skillet over Medium heat. Cut tomatoes in half. Chop onion. Chop olives coarsely.

Cook pasta 3 to 5 minutes in boiling water or until tender; drain well.

Slice chicken thinly across the grain and then into bite-sized pieces. Toss chicken with hot pasta and spinach in a large bowl. Add tomatoes, onions, olives and cheese; stir gently. Serve warm
