1 (16 ounce) jar H-E-B Harvest Moon Heart of Palm, drained & thin sliced
1 (6 ounce) bag baby spinach leaves or spring mix salad
1 large tomato
1 (4 ounce) jar H-E-B Harvest Moon Diced Pimientos, drained
1 cup H-E-B Mexican or Italian Blend Shredded Cheese
1/2 cup Hill Country Fare Thousand Island Salad Dressing
Cut heart of palms in half and set aside. Spread baby spinach leaves in salad platter or 6 individual salad plates. Arrange tomato wedges in pairs in platter or two per salad plate. Stack 3 heart of palm sections in center of tomato wedges. Top salad with diced pimientos and shredded cheese.
Cover salad with plastic wrap and chill for 15 minutes or more. Top salad with Thousand Island dressing before serving.
