Ingredients

5  lb.  Idaho Russet or Golden Yukon Potatoes

1  Tbsp.  Hill Country Fare Cider Vinegar

1 1/4  c.  H-E-B Fat Free Half & Half

1 1/2  c.  Central Market Organics Low Sodium Chicken Broth

1/2  c.  fresh parsley, chopped

Instructions


Peel and cut potatoes into 1/3 inch thick slices and place in a large bowl with water.

Bring 8 cups of water to a boil over high heat in a large soup pot and add 1 Tablespoon each Cider Vinegar and salt to prevent discoloration. Add the potato slices, reduce heat to medium low and cook for 20 minutes. Drain the potatoes and keep warm in a large bowl.

Combine the fat free half and half and chicken broth in a large skillet and bring to a near boil over medium heat. Add the sliced potatoes to the heated broth mixture and mash the potatoes to the desired texture. Season mashed potatoes to taste with salt and fresh cracked pepper. Place potatoes in a serving bowl and garnish with chopped parsley. Serve hot.
