1 Tbsp. Hill Country Fare Canola Oil
1 pkg. (10 oz.) H-E-B Fully Fit™ Fresh Lean Ground Chicken Breast
1 1/2 c. H-E-B Ready, Fresh, Go!® Chopped Onion
1 1/2 tomatoes, chopped
1 c. H-E-B Shredded Reduced Fat Mexican Blend Cheese
1 can (15 oz.) Hill Country Fare Enchilada Sauce (red or green)
12 H-E-B White Corn Tortillas
Heat oven to 400°F. Spray a 9 x 13 inch baking dish with non-stick cooking spray and set aside.
Heat large skillet on High heat for 2 minutes. Add canola oil and ground chicken breast. Stir-fry for 3 to 4 minutes or until completely cooked.
Combine cooked ground chicken, onion, tomato, cheese and enchilada sauce in a mixing bowl. Set the mixture aside.
Place tortillas in a plastic bag and heat on High power for 1 minute or until soft and pliable. Spread 1/4 cup ground chicken mixture down the center of each warm tortilla and roll tightly, one at a time. Place enchiladas in the prepared baking dish in a single layer, seam side down. Spray enchiladas with non-stick cooking spray to keep moist during baking; set aside.
Spoon the remaining enchilada mixture over the enchiladas.
Bake uncovered for 20 minutes or until cheese melts and sauce is bubbly on the edges. Serve immediately.
