Hawaiian BBQ Seafood Skewers

1  grilling mesh

3/4  c. each:  H-E-B Specialty Series Barbeque Sauce and H-E-B Pineapple More Fruit Spread

2  bags (12 oz. each)  H-E-B Halibut or Mahi Mahi Fillets

4  fire wires or 8 metal skewers

2  red onions, peeled and cut into 8 wedges

12  (2-inch square)  pineapple chunks

3  lemons, cut each into 4 wedges

1  red bell pepper, cut into 8 squares


Line a baking sheet with foil for easy clean up and place a grilling mesh on top. Spray the mesh with no-stick spray and set aside.

Combine barbeque sauce and pineapple spread in a small bowl and set aside. Cut each fish fillet into 4 chunks and brush with pineapple barbeque sauce and set aside.

Thread skewers as follow: 1 red onion wedge, 1 pineapple chunk, 1 fish chunk, 1 lemon wedge, 1 red bell pepper chunk, 1 fish chunk and 1 pineapple chunk and repeat the order. Brush seafood skewers with remaining pineapple barbeque sauce. Place skewers on the prepared grilling mesh, cover with plastic wrap and refrigerate until ready to grill.

Prepare charcoal or gas grill for cooking (375°F). Arrange the skewers on the prepared grilling mesh or tray and grill for 5 minutes per side or until fish is cooked to desired degree of doneness. Place on platter, remove fish skewers and serve.
