1  (5 ounce) package  Mahatma Yellow Rice

1  (16 ounce) package  H-E-B Smoked Pork Sausage, thin sliced

1  container  H-E-B Ready, Fresh, Go! Sliced Onions & Peppers

1  (15 ounce) can  black beans, rinsed & drained

1  (14.5 ounce) can  H-E-B Italian Diced Tomatoes

1  package  H-E-B Bolillos


Prepare the yellow rice according to package directions and set aside.

Heat a large skillet over High heat for 3 minutes. Add the sliced sausage, onions, and peppers and stir fry for 5 minutes or until sausage is brown and onions and peppers are tender.

Add rinsed and drained black beans, tomatoes, and cooked yellow rice. Cook and stir beans and rice mixture for 3 minutes until thoroughly heated. Serve with warmed bolillos
