Ingredients

•  Dressing:

1/3  c.  H-E-B Extra Virgin or Reserve Olive Oil

1  lime, for juice (at least 2 tablespoons)

•  Ingredients:

4  Hatch Chiles, (mild or hot), roasted, seeded and chopped

1  pint  H-E-B Zeema or Champagne Sweet Tomatoes, halved

12-14  oz.  mixed greens of your choice (romaine, spring mix, spinach, etc.)

1  pkg.  H-E-B Fully Cooked Shredded Beef or Chicken

1  large avocado

8  oz.  H-E-B Queso Fresco (Mexican cheese), crumbled

•  H-E-B Flour Tortillas

Instructions


Whisk dressing ingredients together in a medium bowl; add chiles and tomatoes; set aside 5 or 10 minutes to let flavors develop.

In the meantime, tear greens into bite-size pieces in a large salad bowl; add beef or chicken. Toss with dressing mixture. Arrange salad on a large platter; top with avocado and queso fresco. Serve with warm tortillas.
