1  lb.  H-E-B Ground Beef (may substitute ground turkey)

•  salt & pepper (or seasoning of choice)

1  jar  Texas Two-Step All Natural Tomatillo and Green Chile Stew Mix

1  can  H-E-B Corn

1  c. (8 oz.)  H-E-B Sour Cream

2  c.  H-E-B Shredded Colby Jack Cheese

4  roasted Hatch Chiles, diced

12  H-E-B Corn or Flour Tortillas, cut or torn into bite-size pieces


Heat oven to 350°F. Spray a 9 x 13-inch baking dish with non-stick spray.

Place beef in a large, non-stick skillet over medium-high heat. Cook, stirring, until beef begins to brown. Season with salt, pepper or seasoning of your choice; cook until beef is no longer pink.

Stir in 2 1/2 cups stew mix, corn and sour cream; stir until heated and remove from heat.

Spoon one-half of meat mixture over bottom of prepared baking dish. Layer 1/2 cup cheese, half of chiles and half of tortillas over casserole.

Repeat step 4 to continue layering process. Pour remaining stew mix evenly over top and sprinkle with remaining 1 cup cheese. Bake 25 to 30 minutes, uncovered, or until hot and bubbly.
