4 large eggs
2 thick slices Black Forest Ham, diced (about 6 ounces)
1 yellow bell pepper, seeded and diced
1/2 of a medium-size red onion, diced
1/3 cup Canyon Foods Tortilla Soup
1 bag (8 ounce) Kraft shredded cheese (variety of your choice)
1 unbaked pie shell (refrigerated or frozen)
Heat oven to 400F. Follow package directions to prepare or thaw pie shell, as necessary.
Whisk eggs together in a medium bowl; stir in ham, diced pepper, onion and soup.
Layer 1/2-cup of cheese over bottom of pie crust. Stir remaining cheese into egg mixture. Pour egg mixture into pie crust.
Bake 45 to 55 minutes or until quiche has set (insert knife in center of quiche; knife should come out clean)
