Cut tomatoes in half, scoop out pulp and set it aside. Brush outside of tomatoes with olive oil.
Combine pulp, cheese, shrimp, cilantro, and seafood seasoning in a bowl and toss to coat ingredients.
Stuff each tomato with 1/4 cup of the mixture and set on a vegetable grilling rack coated with nonstick cooking spray.
Prepare charcoal or gas grill for cooking (375F). Place tomatoes on grill, close lid, and grill for 5 to 8 minutes or until shrimp is cooked and cheese melts
