Cook or grill sausages, chop, and set aside. Cut eggplant in half lengthwise, scoop out pulp and set it aside. Brush outside of eggplant with olive oil.
Chop eggplant pulp, combine with sausage, cheese, and tomatoes in a bowl.
Stuff each eggplant half with half of the mixture and set on a vegetable grilling rack coated with nonstick cooking spray.
Prepare charcoal or gas grill for cooking (375F). Place stuffed eggplant halves on grill, close lid, and grill for 12 to 15 minutes or until eggplant is tender and cheese melts
