6 boneless skinless chicken breasts
3 - 4 beef smoked sausages
* Tony Chacheré Creole Seasoning
* H-E-B Barbeque Sauce, any flavor
* Who Made the Potato Salad?:
1/2 cup onions, celery, and bell pepper, diced
1/4 cup dill pickle relish
6 boiled eggs, chopped
4 Tbsp. mayonnaise
1/4 cup yellow mustard
1 lb. red potatoes, quartered, boiled, drained and cooled on a baking sheet and heavily seasoned with seasoning salt
Season chicken as desired. Set aside. Place chicken on grill and cook for 5 minutes. Rotate chicken breasts 45 degrees and cook for 5 more minutes. Turn chicken over and cook for five more minutes.
Start basting chicken with barbecue sauce on both sides and cook for 5 to 7 minutes more.
Sausage can be cooked with chicken around the perimeter of grill until crispy and sausage begins to split. Dip in sauce and serve with chicken.
Who Made the Potato Salad? Instructions: Combine all ingredients except for potatoes in a large bowl and mix well.
Gently fold in potatoes to coat with dressing.
Refrigerate for 2 to 4 hours to chill and serve cold.
