Grilled Salmon With Fruit Salsa

Ingredients

1 to 1-1/2  pounds  Alaskan salmon fillets

*  salt and ground black pepper

Fruit Salsa:

2 to 3  medium  nectarines or peaches seeds removed

3  pieces  kiwi fruit

1  ripe  avocado seed and peel removed

1/2  cup  red onion finely chopped

1/4  cup  cilantro finely chopped

1  jalapeño seeded and finely chopped

2  Tbsp  fresh lime juice

Instructions


Prepare charcoal fire or heat gas grill on High 10 minutes with lid closed. Oil grill grate well to prevent fish from sticking.

Cut salmon into 4 portions and season with salt and pepper.

Dice nectarines or peaches, kiwis and avocado into 1/4-inch pieces. Toss fruit with remaining salsa ingredients. Season with salt and pepper to taste; set aside.

Place salmon on grill, skin-sides up, 4 inches above Medium heat (375°F grill surface temperature). Grill fillets 5 minutes and turn over carefully. Close grill lid and cook 5 to 10 minutes longer or until salmon is just cooked through and the center has turned from translucent to opaque.

Remove from grill. Trim skin from salmon, if desired. Spoon Fruit Salsa over fillets and serve immediately.
