fresh Mozzarella, cut into 12 thin slices

![]() Instructions ![]() Combine lemon juice and 1 cup of water in a bowl. Cut 4 peaches into round
slices ¼ inch thick. When you get to the peach stone, use a paring knife to
remove the stone and continue slicing the peaches. Dip peaches into the lemon
water and place on paper towels.
![]() Cut the remaining peach into cubes. Combine chopped peach, green onions,
honey, cilantro, lime juice, and olive oil in a food processor or blender bowl.
Process mixture into a dressing, and season to taste with salt and pepper, and
set aside.
![]() Spray a grilling mesh with nonstick cooking spray and place on a foil-lined
baking sheet. Brush each peach round with the dressing and place on prepared
grilling mesh.
![]() Heat grill to medium heat (375°F). Clean grill of all grease drippings. Place
grilling mesh with peach slices on grill and cook for 3 minutes per side or until
grill marks form.
![]() Make 4 layered stacks of grilled peaches and Mozzarella. Drizzle with
remaining dressing. Can be served on a bed of Central Market™ Organics Herb
Garden Spring Mix if desired.
