Grilled Greek-Style Lamb Skewers

1  clove  garlic, minced

2  Tbsp.  onion, grated

1  lb.  H-E-B Natural Ground Lamb

1  tsp.  ground cumin

1/2  tsp.  allspice

1/2  tsp.  black pepper

1  tsp.  coriander

1  tsp.  salt

1/2  c.  parsley, chopped

28  wooden, skewers, soaked in water 30 minutes


Blend garlic and onion in a blender or food processor until a paste forms.

Place ground lamb in a large bowl; add onion-garlic paste, cumin, allspice, black pepper, coriander, salt and parsley. Mix well and form into 28 rounded meatballs.

Place 2 meatballs on each skewer, flattening each meatball into an oblong shape. Slide another skewer into the meatballs to make them more secure.

Chill 30 minutes.

Preheat grill to medium-high. Grill skewered meatballs 5 minutes per side. Serve immediately.
