2 dozen littleneck clams
* cocktail sauce or melted butter, for dipping
Scrub clams under running water. Discard any that are broken or not tightly closed.
Heat charcoal 25 minutes until covered with a light layer of gray ash or heat gas grill on high 10 minutes with lid closed.
Heat a fish or vegetable grate on grill 5 minutes before placing clams on it. Otherwise, arrange clams directly on grate. Grill 4 to 8 minutes over medium-high heat (425 degree grill surface temperature) until shells open. Discard any clams that do not open during cooking. Serve immediately with cocktail sauce or melted butter for dipping.
