4 beef strip loin steaks or 1 pound top sirloin steaks, cut 1-inch thick
2 cans (4-oz) diced green chilies
1 tablespoon olive oil
4 cloves medium garlic, minced
1/4 teaspoon dried oregano leaves
1/4 teaspoon black pepper
4 teaspoon fresh cilantro, minced
1 teaspoon black pepper
1 teaspoon garlic salt
1/8 teaspoon cayenne pepper (optional)
To make chili stuffing, heat oil in non-stick skillet over medium heat.
Add chilies, garlic, oregano and pepper. Cook 4 minutes, while stirring.
Remove from heat and add cilantro.
Cut a horizontal pocket in each steak to prepare for stuffing. Stuff each strip steak with 1/4 chili stuffing.
Combine rub ingredients. Lightly season each steak with rub mixture.
Grill steaks 4 to 6 inches from medium coals for 12 minutes total; turn once.
