1  tablespoon  H-E-B Extra Virgin Olive Oil

1/2  small onion, sliced into rings

2  cloves  garlic, peeled and chopped

1  can ( 4 oz.)  Hill Country Fare Mushroom Stems and Pieces, drained

1  can ( 14 1/2 oz.)  H-E-B French Style Green Beans, drained

1  tablespoon  chopped red bell pepper (optional)


Trim ends from green beans; cut beans in half or into 2-inch pieces.

Melt 3 tablespoons butter in a large nonskillet over Medium-High heat. Add mushrooms and almonds; sauté 5 minutes or until mushrooms are tender and almonds are browned lightly. Remove mushrooms to a serving bowl; cover to keep warm.

Melt remaining 3 tablespoons butter in same skillet; add shallot and garlic and sauté 2 minutes or until tender. Add green beans and toss to coat.

Pour broth over green bean mixture. Reduce heat to Medium; cover skillet and cook 10 to 15 minutes or until liquid evaporates and green beans are crisp-tender.

Toss green bean mixture with mushrooms and almonds; season to taste. Serve while hot.
