1 pt. grape tomatoes
1/2 red onion, cut into very thin 1/2 moons
1/2 cucumber, cut into 1/2 moons
2 Tbsp. fresh lemon juice
2 Tbsp. Hill Country Fare Extra Virgin Olive Oil
1/4 tsp. H-E-B Kosher Salt
1/8 tsp. black pepper
1/4 c. Italian parsley, chopped
1/2 c. reduced fat feta, crumbled
Mix tomatoes, onions, cucumber, lemon juice, olive oil, salt, and pepper in a mixing bowl. Add Italian parsley and mix well.
Serve salad on a nice platter with crumbled cheese over the salad.
Refrigerate or serve immediately.
