1 pound Kentucky Wonder beans, cut into 1-inch lengths or frozen French-cut green beans
1 each lemon, juiced
1 tablespoon olive oil
2 cloves garlic, crushed
1 teaspoon oregano leaves
1/2 teaspoon salt
Bring 3/4 cup water to a boil in a 2 quart sauce pan.
Steam or simmer beans over Medium heat, covered, for 5 minutes or until tender.
Whisk together lemon juice, oil, garlic, oregano and salt.
Toss beans in dressing and serve at room temperature.
Recipe Variation: Tomato, chopped onion and crumbled feta cheese may be added to this salad if serving for a menu other than gyros
