3 each medium zucchini (4 cups grated)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon lemon juice
Wash and trim zucchini. Shred on largest side of grater to make 4 cups shredded zucchini.
Heat oil 2 minutes in a large non-stick skillet or wok over high heat.
Add zucchini, garlic powder, salt, and pepper. Sautèacute; 3 minutes, stirring often.
Sprinkle with lemon juice and toss. Serve immediately.
