1 1/4 pounds Alaskan cod fillets
* non-stick cooking spray
1/2 medium onion, thinly sliced
1/2 cup light sour cream
1/2 cup low fat mayonnaise
2 tablespoons dry sherry
4 teaspoons fresh lemon juice
1/4 to 1/2 teaspoon curry powder
Heat oven to 375 degrees.
Cut cod into 4 portions. Coat a shallow baking dish with cooking spray. Scatter onion over bottom of dish and top with cod fillets.
Stir sour cream and remaining ingredients together in a bowl until smooth. Spread sauce evenly over top of cod.
Bake fish 20 to 30 minutes, depending on thickness, until center turns opaque. Garnish with thin slices of lemon and parsley, if desired.
