3 c. Gluten Free Pasta
2 Tbsp. H-E-B Olive Oil
1 c. chopped H-E-B Ready, Fresh, Go! Onions
1/2 c. chopped H-E-B Ready, Fresh, Go! Bell Pepper
2 H-E-B Ready, Fresh, Go! Garlic Cloves, chopped
1 pkg. (8 oz.) shredded H-E-B Mexican Blend Cheese
Heat oven to 400°F. Spray a 9 x 13-inch baking dish with non-stick cooking spray and set aside.
Prepare pasta according to package instructions.
Meanwhile, heat a large skillet over high heat for 2 minutes. Add oil, onions and bell pepper; stir-fry over medium heat for 2 minutes. Add garlic and continue to stir-fry for 1 more minute or until onion is golden brown. Add drained pasta and cheese to onion mixture. Evenly spread the pasta mixture into the prepared baking dish.
Loosely cover with foil and bake for 10-15 minutes. Remove foil and bake 5 more minutes.
