1 pkg. (16 oz.) Gluten Free Penne
1 container (12 oz.) H-E-B Ready, Fresh, Go! Pico de Gallo
1 can (12 oz.) mexicorn, drained
• juice of 1 lime
2 c. H-E-B Italian Shredded Parmesan Cheese
1/4 c. H-E-B Olive Oil
• salt & black pepper
Prepare pasta according to package directions.
While pasta is cooking, combine pico de gallo, corn, lime juice, Parmesan cheese and olive oil in a large pasta bowl.
Drain pasta, rinse, drain again and add to pico de gallo mixture and toss to combine. Season to taste with salt and black pepper. Cover with plastic wrap and chill for 15 minutes.
