Ingredients

Cake:

1/3  cup  unsalted butter

6  eggs

1  cup  sugar

1  teaspoon  Hill Country Fare Imitation Vanilla

3 1/4  c.  Hill Country Fare All-Purpose Flour

1/2  cup  Hill Country Fare Unsweetened Cocoa Powder

Frosting:

1  cup  sugar

3  egg yolks, beaten

1  teaspoon  Hill Country Fare Imitation Vanilla

3/4  cup  Hill Country Fare Evaporated Milk

1/2  cup  H-E-B Butter

1 1/3  cup  Hill Country Fare Coconut Flakes

1  cup  Hill Country Fare Pecan Pieces

1  (6 ounce) jar  H-E-B Harvest Moon Cherries

Instructions


Cake: Heat oven to 350 degrees F. Heavily spray two 8-inch cake pans with nonstick cooking spray and line them with parchment or waxed paper. Set pans aside. Melt butter and set aside to cool.

Combine the eggs, sugar, and vanilla in a large mixing bowl. Beat with an electric mixer on high speed for 5 minutes or until the batter is very thick.

Combine the flour and cocoa powder in a bowl. Sift the flour mixture over the cake batter and carefully stir in the flour mixture using a large spoon. Gently stir the melted butter into the cake batter.

Divide the cake batter between the two prepared cake pans. Bake the cakes on the center oven rack for 25 minutes or until the cakes are firm to the touch. Allow the cakes to cool in the cake pans for 5 minutes and then turn over on to cake racks for cooling. Remove the parchment paper once the cakes are cool.

Frosting: Combine sugar, egg yolks, vanilla, evaporated milk, and butter in a large saucepan. Heat over Medium-Low heat, stirring frequently, for 10 to 12 minutes or until mixture thickens.

Add the coconut and pecan pieces. Pour icing into a large glass bowl to cool (about 20 minutes). (For quick cooling, place icing in freezer for 10 minutes and then stir. Stir the icing several times until it is creamy enough to spread on the cake.

Place first cake layer on cake platter and spread icing on layer.

Top with remaining cake layer and spread icing on top and sides. Decorate top of cake with cherries.
