1 lb. large elbow macaroni
1/4 c. H-E-B Basting Oil
1/3 c. flour
1 qt. whole milk
8 oz. cream cheese
3 c. shredded cheddar cheese
Preheat oven to 400ºF. Spray a 9x13-inch casserole dish with non-stick cooking spray and set aside.
Cook macaroni according to package instructions. Drain well.
While macaroni is cooking, combine basting oil and flour in a 3-quart pot over Medium heat. Stir until a smooth paste forms (it will look like wet sand). Slowly add milk, whisking constantly until smooth. Add cream cheese and salt, and stir until cheese melts and sauce is smooth.
Add cooked macaroni and 1 cup shredded cheese to sauce; toss to combine. Place in prepared dish, top with remaining shredded cheese and bake 20 minutes, or until cheese melts and is slightly browned.
