2 medium sweet potatoes, about 1 1/2 pounds total
1 cup chopped onion
2 teaspoons minced garlic
2 tablespoons butter
1 cup long-grain rice
1 14 1/2 ounce can chicken broth
1 6 ounce can pineapple juice
1 cup Golden Stream All Fruit Mix
1/2 teaspoon salt
1/2 tsp. ground black pepper
Peel sweet potatoes and cut into 1/2-inch cubes. Chop onion. Mince garlic.
Melt butter in a large skillet over Medium-High heat. Sautèacute; onion, garlic and rice 4 to 5 minutes or until rice is golden.
Stir in sweet potatoes, broth, juice and fruit mix and bring to a boil. Push rice down in skillet to ensure rice is submerged in liquid, then cover pan with a tight fitting lid. Reduce heat to Low and simmer about 20 minutes or until liquid is absorbed.
Stir and remove from heat. Cover and let stand 5 minutes; serve while hot
