3 lbs. H-E-B Boneless Center Cut Pork Loin Roast
3 cans (4 oz. each ) diced green chiles
1 can (14.5 oz.) H-E-B No Salt Added Diced Tomatoes
2 Tbsp. H-E-B 30% Lower Sodium Taco Seasoning Mix
1 Tbsp. ground cumin
24 H-E-B White Corn Tortillas
Cut pork roast in half and arrange in a crockpot.
Combine green chilies, diced tomatoes, taco seasoning, and ground cumin in a bowl and mix well. Pour over pork roast.
Cover crockpot and cook on Low 6 hours or until pork is cooked through and tender.
Remove from crockpot and use 2 forks to shred the pork. Return to crockpot and mix well with crockpot drippings.
Warm tortillas in microwave or on stovetop and fill each tortilla with about 1/4 cup pork.
