4 large eggs, lightly beaten
1 1/2 cups H-E-B Buttermilk
1 cup H-E-B Shredded Mexican Blend or Cheddar Cheese
2 cups frozen Hill Country Fare Chuckwagon or Super Sweet Corn
2 (6 ounce) packages Hill Country Fare Sweet Cornbread Mix
1/4 cup H-E-B Whipped Butter
Heat oven to 375 degrees F. Heavily spray a 9 x 13-inch baking pan with nonstick cooking spray and set aside.
Combine eggs, buttermilk, cheese, frozen corn and cornbread mix in a large mixing bowl; stir well. Pour batter into prepared baking pan and bake uncovered for 30 minutes or until golden brown. Spread whipped butter over cornbread and cool for 5 minutes. Cut into squares and serve.
