Fauxtatoes (Cauliflower Mash)

1  head  cauliflower, trimmed into florets

2  small  Yukon gold potatoes, diced

1/3  c.  Central Market Low Sodium Chicken Broth

1  Tbsp.  chipotle in adobo sauce, minced

4  Tbsp.  plain Greek yogurt

1/4  tsp.  salt

1/2  tsp.  pepper

2  green onions, minced


Bring a large pot of water to a rolling boil.

Add cauliflower and potatoes, and cook until soft enough to pierce with a fork. Drain and return to the pot.

Add chicken broth and use a hand mixer to puree cauliflower and potatoes.

Add chipotle peppers, yogurt, salt and pepper; mix to combine.

Top with green onions and serve.
