1 tablespoon Fiesta Fajita Seasoning
4 Hill Country Fare Boneless Skinless Chicken Breasts, thin sliced
2 tablespoons canola oil
1 (16 oz.) bag Hill Country Fare Fajita Blend Vegetables
1 (12 ct.) package Mission Fajita Grande Tortillas
1 (8 oz.) container H-E-B Sour Cream (regular, light or fat free)
1 (27.5 oz.) can Tierra Linda Whole Jalapeños, drained and sliced lengthwise
Season thin sliced chicken breasts with Fiesta Fajita Seasoning. Heat a large skillet over high heat for 2 minutes. Add oil and add seasoned sliced chicken. Stir-fry chicken for 4 to 5 minutes. Remove chicken from skillet and place in a serving dish.
Using the same skillet, heat over high heat for 2 minutes and add the frozen Hill Country Fare Fajita Blend Vegetables. Stir-fry the fajita blend vegetables for 5 minutes or until vegetables are golden brown on edges. Add cooked chicken to vegetables and stir-fry 1 more minute.
Wrap tortillas in paper towels and microwave on high power for 1 minute or until they are steamy hot. Place tortillas in a tortilla warmer or wrap in foil to keep warm.
Arrange stir-fried chicken and fajita blend vegetables, hot tortillas, sour cream and jalapeños in serving plates and let everyone assemble their fajita wraps.
