1 bag (16 oz.) H-E-B Fajita Vegetables
1 bag (12 oz.) sliced H-E-B Fully Cooked Chicken Breasts or Beef Fajitas
1 bag (16 oz.) H-E-B Steamable Spanish Rice
1/2 bag (1/2 c.) H-E-B Sliced Zucchini or H-E-B Broccoli Florets
Spray a 13 x 9-inch microwave safe baking dish with non-stick spray and set aside.
Heat a heavy bottom skillet over high heat for 3 minutes. Add canola oil and fajita vegetables and stir-fry for 5 minutes or until onions become slightly browned. Add chicken or beef fajitas and continue to stir-fry for 3 minutes.
Meanwhile, heat Spanish rice according to package directions and spread on bottom of prepared baking dish and set aside. Place zucchini or broccoli florets in a microwave safe bowl, cover with plastic wrap and microwave on high power for 4 minutes. Spread cooked zucchini or broccoli florets over rice.
Spread fajita vegetables and fajitas over rice and zucchini or broccoli florets mixture, cover with plastic wrap and heat in the microwave oven on high power for 6 minutes.
