1 (1 lb 4 oz) bag fresh Simply Potatoes® Sliced Home Fries
1 cup chopped onion
1 tablespoon butter
1 tablespoon olive or vegetable oil
* salt and pepper, to taste
* sour cream, optional
Heat 1/2 tablespoon each butter and oil in a large non-stick skillet over Medium-High heat. Swirl skillet to coat bottom. Add half of the onions and half of the potatoes; spread to cover bottom of skillet. Cook 5 minutes. Use a spatula to turn in sections. Season with salt and pepper. Cook second side 5 minutes. Slide potatoes onto a platter.
Heat the remaining butter, oil, onion and potatoes, repeating the same swirling action and spreading the onions and potatoes until they cook. Turn in sections. Season with salt and pepper. Garnish with sour cream, if desired and serve while hot.
