4  oz.  salmon fillets

1/2  tsp.  salt & pepper

2  lemons

1  orange

1  c.  white wine


Season salmon with salt and pepper and set aside.

Squeeze lemons and orange into a medium saucepan. Add wine and 1 cup water and then bring to a boil.

Place a large skillet over Medium heat. Add enough hot juice mixture to measure about an inch deep.

Add salmon fillets and bring to a light simmer. Cover and cook 7 to 10 minutes until desired degree of doneness.
