2 tablespoons canola oil
1 cup Riceland extra long grain rice
1 cup Hill Country Fare frozen fajita blend
1 8 ounce can tomato sauce
1/2 teaspoon ground comino
1/4 cup chopped cilantro
Heat a heavy 3 to 4 quart pot or medium skillet over high heat for 3 minutes. Add oil and rice and stir-fry rice for 4 minutes or until light golden.
Add fajita blend and stir-fry for 3 more minutes. Add tomato sauce, 1-cup water, comino and cilantro. Bring rice mixture to a boil over high heat and season to taste with salt and pepper. Cover, reduce heat to low and cook for 20-25 minutes or until rice is fluffy.Makes: 4 cups cooked rice
