12-inch pizza


2  pkg. (14 oz.)  frozen pizza yeast dough

2  Tbsp.  H-E-B Olive Oil

1  container (8 oz.)  H-E-B Chef Prepared Basil or Sundried Tomato Pesto

1  c.  your choice H-E-B Shredded Cheese

2  roma tomatoes , thin sliced

*  your favorite toppings


Thaw pizza dough according to package directions. Cut each ball of dough into 3 portions and place on an oiled tray.

Brush a large sheet pan or tray with olive oil. Spread and flatten pizza dough with the palms of your hands into a 10-to-12 inch freeform circle.

Prepare a hot charcoal fire, with coals on one side of the grill. This indirect heat source will allow you to adjust the amount of heat the pizza needs. When the coals are glowing and ashen, gently lift and place the dough on the indirect side of the grill. Rotate the crust a couple of times. Within 2 minutes the dough will puff slightly and grill marks will appear.

Using tongs, immediately flip the crust over, onto the coolest part of the grill. Quickly brush the grilled surface with pesto, your favorite cheese, tomato slices, and the rest of your selected toppings. Close grill cover and grill for 6 to 8 minutes depending on how many toppings you loaded on your pizza. Use tongs to rotate the pizza once during grilling to prevent burning. The pizza is done when the top is bubbly and the cheese is melted. Serve at once.
