Czech Chicken Salad

Toasted almonds, sesame seeds and noodles bring out the mellowest of flavors. When mixed with chicken, sautéed in ginger, the final result is a dish that is flavorful and satisfying.

3  chicken breasts

2  tablespoons  fresh ginger, finely ground or grated

1/4  cup  sesame seeds

1  package  Ramen noodles, broken in pieces

1  c.  slivered almonds

1/4  cup  sugar

1/4  cup  vinegar (rice wine vinegar preferred)

2  teaspoons  salt

1/8  teaspoon  pepper

1/4  cup  salad oil

1  head  lettuce, shredded

3  green onions, finely chopped


Sauté chicken with ginger in pan sprayed with vegetable spray.


Toast sesame seeds, noodle pieces and almonds in oven at 250 degrees until golden.

Combine sugar, vinegar, salt and pepper in small saucepan.Heat until sugar is dissolved.

Add oil after mixture has cooled.

Mix lettuce, onions and chicken just before serving.

Pour dressing over top and mix.

Top with seeds, noodles and almonds
