Cumin Dusted Chicken with Roasted Shredded Brussels Sprouts

1   bag (10 oz.)  H-E-B Shaved Brussels

1   lb.  H-E-B Boneless Skinless Chicken Thighs, sliced

1/2  1/2  onion, sliced

2   Tbsp.  olive oil, divided

1   tsp.  cumin

1/2   tsp.  salt

1/2   tsp.  black pepper


Preheat oven to 400°F.

Place Brussels on a foiled lined sheet pan and roast until edges are browned and crisp, about 15 minutes.

Meanwhile, combine chicken with remaining ingredients in a large bowl. Mix well.

Heat a large nonstick skillet on Medium-High. Add chicken mixture and cook 12 minutes stirring frequently.

Serve immediately with roasted Brussels.
