8  roma tomatoes, chopped

1  cucumber, seeded and sliced on a bias

1  red onion, thinly sliced

1  Tbsp.  chopped garlic

3  Tbsp.  H-E-B Extra Virgin Olive Oil

3  Tbsp.  H-E-B Red Wine Vinegar

*  salt and pepper to taste

1  c.  H-E-B Reduced Fat Crumbled Feta Cheese

1  avocado, sliced


Combine tomatoes, cucumber, onion, garlic, oil and vinegar in a mixing bowl. Let sit 20 minutes.

Add salt and pepper.

Divide tomato mixture among 4 plates and top with crumbled feta and sliced avocado.
