1 (5 ounce) package Hill Country Fare Chicharrones, any flavor
2 eggs, beaten
1/4 cup half & half
6 (4 ounce) fillets Hill country Fare Frozen Pollock Fish Fillets, thawed
Heat oven to 450 degrees F. Line a baking sheet with foil and spray with nonstick cooking spray.
Place Hill Country Fare Chicharrones in a food processor and process for 30 seconds or util the mixture reaches the texture of cornmeal. Place in a shallow dish.
Combine the eggs and half & half in a shallow dish. Dip the thawed fish fillets in the egg wash and then press into the chicharrón crumbs; shake off the excess and place on the prepared baking sheet.
Bake on center oven rack for 10 to 15 minutes depending on the thickness of the fish fillet: 10 minutes per inch.
