Ingredients

1  pound  Catfish Fillets, cut into 4-inch pieces

1  H-E-B Egg

1  teaspoon  Hill Country Fare Lemon Pepper

1/2  teaspoon  Hill Country Fare Seasoned Salt

1/2  teaspoon  Hill Country Fare Black Pepper

1/2  teaspoon  cayenne pepper

1/4  cup  flour

3  cups  corn flakes, coarsely crushed

3  tablespoons  grated Parmesan cheese

*  nonstick cooking spray

Instructions


Heat oven to 450 degrees F.

Beat egg, lemon pepper, seasoned salt, pepper and cayenne in a small bowl.

Place flour in a shallow bowl or on a plate.

Combine corn flakes and Parmesan in a medium bowl.

Prepare a baking sheet with non-stick cooking spray.

Coat both sides of catfish pieces in flour.

Dip in egg mixture and coat both sides with corn flake mixture.

Arrange pieces on baking sheet to allow at least 1/2-inch space between fish.

Bake about 12 minutes until corn flakes just begin to brown and fish is opaque (white) in center.
