1 1/2 cups H-E-B toasted rice cereal
1/3 cup Hill Country Fare pecan pieces
1/2 cup H-E-B fancy shredded parmesan or romano cheese
8 Hill Country Fare frozen pollock fish fillets frozen
1/2 cup H-E-B mayonnaise
2 Fresh lemons cut into wedges
Heat oven to 500°F. Line a baking sheet with foil and spray with non-stick cooking spray.
Combine H-E-B Toasted Rice Cereal, pecans and Parmesan cheese in a food processor bowl, process for 5 to 10 seconds, place in a shallowdish and set aside.
Place the fish fillets on the prepared baking sheet and season to taste with salt and pepper. Spread the mayonnaise on each fish fillet and top with enough cereal cheese mixture to coat the fillet.
Bake fish on the center oven rack for 10 minutes or until fish flakes easily from the center. Serve with lemon wedges.
