Creole-Style Pot Roast

2 - 3  lb.  boneless beef chuck or soulder roast

2  Tbsp.  Adams Reserve Southwest or Cajun Seasoning Rub

1  Tbsp.  H-E-B Pure Olive Oil

1  jar (34 oz.)  Cookwell & Co. Cajun Two-Step Gumbo Mix

2  lb.  size "C" new potatoes, optional

1  bag  frozen peas, optional


Season beef roast with Adams Rub of your choice.

Heat Dutch oven or cooking pot over medium-high heat. Add oil; sear beef 4 to 5 minutes per side or until browned nicely.

Pour gumbo mix over roast; bring to a simmer. Reduce heat to low, cover and cook 2 to 2 1/2 hours or until beef is very tender. Cut potatoes in half and add after 1 1/2 hours of cooking. Add peas during last 5 minutes.

Slice or shred beef; serve with potatoes and peas if desired.
