2 cups flour
1/2 cup cornmeal
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups milk
1/2 cup butter, melted (1 stick)
2 cups shredded Colby Jack cheese (8 ounces)
1/2 cup finely chopped green or red bell pepper
1/2 cup finely chopped onion

Heat oven to 400°F. Spray a 9 x 13-inch glass baking dish with non-stick cooking spray.
Blend flour, cornmeal, sugar, baking powder and salt together in a large bowl.
Whisk eggs, milk and melted butter together in a separate medium bowl; stir into flour mixture until just blended. Add cheese, bell pepper and onion; stir gently. Pour into prepared baking dish.
Bake 30 minutes or until cornbread is brown around the edges and springs back when touched lightly in the center. Let stand 5 minutes, cut into squares and serve while hot.
